General principles
Heat kills many pathogens. In pregnancy, prefer well-done meat and seafood.
Common Vietnamese dishes
- Phở tái (rare beef slices): ask for well-done beef (tái chín kỹ) or choose chicken phở with fully cooked meat.
- Gỏi / raw salads: ensure vegetables are washed; prefer cooked salads if hygiene is uncertain.
- Blood pudding, raw eggs: avoid.
Storage
Refrigerate leftovers within 2 hours; reheat thoroughly. Do not eat room-temperature broth with meat left out long hours.
